Making Gnocchi with Your Kids

GNOCCHi – Making Gnocchi with your Kids

I wanted to make homemade pasta with my kids, but I didn’t have a pasta machine.

What’s a mom to do?

I will make GNOCCHI!!!

Making gnocchi is extremely easy and it was so delicious. This was a really fun activity to do with my children. They had a blast and little did they know that they were taking the task of making dinner off my hands.

Making Gnocchi

GNOCCHI RECIPE: (6 servings)

4 – Russet Potatoes (the large ones you would use for baked potatoes)

2 cups of flour

2 eggs

Microwave the potatoes so they are thoroughly cooked. Then, let them cool completely.

Remove the potato skin. If you have a potato ricer, rice your potatoes. If you do not own a ricer, use a cheese grater. Grind each potato on a medium grate.

Place your riced potatoes into a large mixing bowl.

Form a well within the center of the potatoes.

In a separate bowl, beat your eggs.

Add to the well. Then add one cup of flour.

Mix carefully with your hands. (Key is not to overwork your mixture.)

Then add the second cup of flour. Again, mix carefully.

Sprinkle some flour on a clean countertop. Form your mixture gently until it all comes together into a ball.

Cut the ball into 4 equal pieces.

Roll your ball until you form a long rope about 1/2 inch in diameter.

Cut the rope into one-inch pieces. (They should look like little logs.)

Press down carefully with a fork on half the gnocchi to give it the traditional gnocchi appearance.

Making Gnocchi

Fill a large pot with water and generously salt.
**The salt will give the gnocchi some additional flavor.)

Boil your water.

Add your gnocchi a bit at a time into your pot. DO NOT overcrowd.

Within a minute or so, your gnocchi will rise to the top of the boiling water. At that point, you will know your gnocchi is cooked.

Remove gnocchi from water with a slotted spoon. (DO NOT use a colander.)

When all the gnocchi are cooked, top with your favorite sauce. You can use anything – butter and sage, homemade sauces or even a jar of store-bought sauce works.

Top with parmesan cheese.
